The pan chefs reach for

Stainless steel gives you a proper golden sear and the browned bits that make a great pan sauce, something non-stick pans can't do. With no coating to scratch or peel, this Fissman frying pan handles metal utensils and high heat, and it goes straight in the dishwasher when you're done. The 24cm is the everyday pan, the 28cm feeds the whole family.

How to stop food sticking to stainless steel

  1. Preheat the empty pan on medium for 2 to 3 minutes.
  2. Flick in a drop of water. If it beads up and glides around, the pan is ready.
  3. Add oil and give it a few seconds to shimmer.
  4. Pat your food dry and lay it in the pan.
  5. Leave it alone. Once it has seared, it releases on its own and flips easily.

FAQs

Which size should I get?

The 24cm is right for most everyday cooking for one or two. Choose the 28cm if you cook for a family or like room to stir-fry and make pan sauces.

Does it work on induction?

Yes. It works on induction, gas, electric and glass ceramic cooktops.

Can it go in the oven?

No, this pan is made for the cooktop. For dishes that finish in the oven, try a cast iron pan.

Why does food stick to my stainless pan?

Almost always because the pan wasn't hot enough or the food was moved too early. Follow the steps above and it releases cleanly.

How do I clean burnt-on marks?

Soak in warm soapy water, then scrub with a paste of bicarb soda and water. Our guide on cleaning a stainless steel frying pan covers the rest.
