Thin, golden crepes every time

The Fissman cast iron crepe pan has a low, shallow edge that makes spreading batter and flipping easy, and cast iron holds heat evenly, so every crepe cooks golden from edge to centre. It's just as good for pancakes, tortillas, flatbreads and roti. Season it before first use and it builds a natural non-stick finish that only gets better, with no chemical coatings.

How to make crepes

  1. Whisk your batter until smooth and let it rest for 20 to 30 minutes.
  2. Heat the pan on medium for a few minutes and wipe it with a little butter or oil.
  3. Pour in a small ladle of batter and tilt the pan straight away to spread it thin.
  4. Cook for about a minute, until the edges lift and the base is golden.
  5. Flip and cook the other side for 20 to 30 seconds. Repeat, re-greasing lightly every few crepes.

FAQs

How do I season a cast iron crepe pan?

Your pan arrives unseasoned, so season it before the first cook:

  1. Wash in warm soapy water, then dry completely over low heat on the stove.
  2. Rub a very thin layer of high smoke point oil, like vegetable, canola or flaxseed, over every surface.
  3. Wipe off the excess with paper towel until it looks almost dry. Too much oil turns sticky.
  4. 20cm short handle: bake it upside down in the oven at 230°C for 1 hour, with a tray underneath, then let it cool in the oven.
  5. Long handle pans: season on the stovetop instead. Heat on medium until the oil just starts to smoke, let it cool, and repeat 3 times.

Re-season any time the surface looks dull or crepes start to stick.

Short or long handle?

The long handle gives you more reach and makes tilting and flipping easier on the stove. The short-handle 20cm is more compact, fits easily in the cupboard and is oven safe.

Can I make pancakes in it?

Yes. It's great for pancakes, pikelets, tortillas and flatbreads as well as crepes.

Does it work on induction?

Yes. It works on induction, gas, electric and glass ceramic. Lift it rather than sliding it on glass tops.

Why is my first crepe always a flop?

Usually the pan isn't fully up to heat yet. Give it a few minutes on medium before the first pour, and the rest come out golden.

How do I look after it?

Wash with hot water and a brush, dry it fully on the stove and wipe on a thin layer of oil. Never soak it or put it in the dishwasher.
